Yes, we used cubed meat as well; I keep meaning to try it with venison, but never quite get around to it, now that I don't live somewhere with easy access to game in the winter.
I went through a phase of making chili from cubed beef, but ground is a little easier, and it cooks up thicker. If it needs more liquid as it cooks I add water or stock, but I start with beer or wine.
